Ingredients for a portion
- 2 big potatoes
- 150g fresh spinach (2 bunches)
- 1-2 green onions
- 1 tablespoon butter (for those not fasting)
- 1 tablespoon cream (optional)
- 1 tablespoon grated carrot
- chopped green dill
- chopped chervil
- Aromatic Spices: coriander powder, cumin, curry, basil
- Salt
- Pepper
Preparation
- Clean, wash, cut in pieces and boil potatoes in salted water for 20 minutes .
- Choose spinach leaves, wash in water 3-4 times. Place in boiling water the spinach for to 2-3 minutes. Take it out and drain. Chop them finely.
- Clean and wash a carrot and cut in small pieces.
- Wash and finely cut green onions, parsley and chervil.
- When potatoes are ready drain the water but retain a cup of water.
- Make potato puree with the mixer. Add a little bit of water in which the potatoes boiled. Then mix with chopped spinach and butter, cream.
- Add grated carrot, minced onion and chopped dill, and aromatic spices. Add salt and pepper.
